White Chocolate, Cranberry and Oatmeal Cookies

Dry ingredients:
3/4 cups flour
3/4 c dried cranberries
3/4 teaspoons baking powder
1/2 teaspoons salt
1 cups white chocolate chips
1/2 cup packed brown sugar
1 cup quick cooking oats
1/2 cup granulated sugar
Wet ingredients:
1/2 cups (1 stick) butter
3/4 teaspoons vanilla
1 egg
Optional:
1/2 cup nuts (suggested macadamia)
Let batter sit in the refrigerator for at least 30 minutes. Bake for 9 minutes at 375F. Let cool one minute in pan before transferring to a cooling rack for an additional 5 min.
*Mason jar option: Layer all dry ingredients in a 1 quart (1 liter) mason jar. When ready to bake, mix wet ingredients in a large bowl. Add contents of mason jar. Stir well. Let batter sit in the refrigerator for at least 30 minutes. Bake for 9 minutes at 375F.
