Gingerbread Cookies

Dry ingredients:
3 1/2 cups flour
1 Tablespoon ground ginger
2 teaspoons ground cinnamon
1 1/2 teaspoons baking soda
1/2 teaspoon nutmeg
1/4 teaspoon cloves
1/2 teaspoon allspice
1/2 teaspoon salt
3/4 cups packed brown sugar
Wet ingredients:
1/2 cup (1 stick) butter
1/2 cup molasses
2 eggs
Let batter sit in the refrigerator for at least 60 minutes. Bake for 8-10 minutes at 350F or until edges start to brown. Let cool one minute in pan before transferring to a cooling rack for an additional 5 min.
*Mason jar option: Layer all dry ingredients in 1 quart (1liter) mason jar. When ready to bake, mix wet ingredients in a large bowl. Add contents of mason jar. Stir well. Let batter sit in the refrigerator for at least 60 minutes. Bake for 8-10 minutes at 350F.
