
This is a wonderful soup. There are several ways to alter to suit individual tastes, is prepared in a slow cooker with minimal mess and it is a great way to use up leftovers.

Dry ingredients:
1/2 cup dry split peas
1/4 cup pearl barley
1/2 cup dried lentils
1/4 cup dried onion flakes
1 Tablespoon garlic powder
2 teaspoons dried italian seasoning
1/2 cup dry, brown rice
2 bay leaves
1/2 teaspoon pepper
1-2 14 oz cans of diced tomatoes (your preference)
Optional ingredients:
1 teaspoon salt (opt - depending on salt level in the stock you choose)
**1 pound meat of your choice (opt - can be vegetarian)
3 liters of stock of your choice (opt - can use water)
1 small can of tomato paste (opt)
Combine all and cook in a slow cooker on low for 4 hours.
**Note - meat must be thawed, but can be raw or cooked when added to soup ingredients.
*Mason jar option: Layer all dry ingredients in 1 pint (.5 liter) mason jar. When ready to serve, add contents of jar, 3 liters of water or stock, one 14 oz can of diced tomatoes and if desired, 1 small can of tomato paste, 1 pound of meat (optional) and cook in a slow cooker on low for 4 hours.
