Chocolate Candy Cane Cookies

Dry ingredients:

1 1/2 cups flour

1/3 cups cocoa powder

1/2 teaspoons baking soda

1/4 teaspoons salt

1/2 cup mini white or mini semi-sweet chocolate chips

1/2 cup packed brown sugar

1/3 cup granulated sugar

1/4 cup crushed candy canes. Set aside in separate bowl, do not add to dough.


Wet ingredients:

1/2 cups (1 stick) butter

1 teaspoon vanilla

1 egg

1/2 teaspoon peppermint extract (optional)


Beat wet ingredients until light and fluffy. Add dry ingredients. Let dough sit in the refrigerator for at least 30 minutes. Roll into balls and press top of balls in crushed candy canes. Bake for 8 minutes at 350F on parchment paper with candy cane side up. Let cool three minutes in pan before transferring to a cooling rack to cool completely.


*Mason jar option: Layer all dry ingredients in a 1 quart (1 liter) mason jar. Tie two candy canes with a ribbon to the lid of the mason jar.
